Easiest Crock Pot Mexican Soup

Just dump all the ingredients in!

Whoever invented the Crock Pot is a genius. The ability to dump a bunch of ingredients into a pot, shut it and come back a few hours to a meal ready to serve is just the best!

I love soup and the crock pot is the best for it! This recipe is so incredibly easy and sooo delicious. It has just 4 ingredients with a little seasoning!


-1 1/2 lbs chicken breast (about 2 large or 3 small)

-1 jar of chunky salsa (15.5 oz)

-17 oz of chicken bone broth

-8 oz of pepper jack cheese (cubed or shredded)

-Cayenne pepper (to taste)

-Chilli lime seasoning (from Trader Joe's and to taste)


-Mexican cheese (shredded)


1. Put the chicken in first

2. Top with salsa, broth, and pepper jack cheese

3. Cook on low for 7 hours

4. Pull out chicken, shred and put back in

5. Add seasonings to taste and mix together

6. Cook on low for another 15 minutes

7. Serve and top with avocado and Mexican cheese

Finished product, topped with a sorta avocado heart :)

As you can see, this is an incredibly simple recipe. I let is cook all day and then when my lovely husband got home from work, I scooped it into some bowls and we got to have dinner right away!
